
Ombligon is a rare coffee variety that has recently come into focus within the specialty coffee community. The term “Ombligon” is derived from the Spanish word ombligo for “belly button”, a nod to the coffee bean’s uniquely dimpled shape. This varietal is currently cultivated only in Colombia’s Huila region. Thanks to its unique flavor profile and scarcity, Ombligon is gaining traction in coffee competitions. Australian Barista Champion Jack Simpson earned third place at the 2023 World Barista Championship using Ombligon sourced from Finca El Diviso.
