
Chevas Geisha Elevation
Pinnacle Subscription for March features Chevas Geisha – Elevation. Jose of Chevas shared with us his newest experimental yeast washed processed lot, and this marks our first Panama release from the 2026 harvest.
Elevation is an experimental processing method introduced this year. After pulping, the coffee is placed in tanks with mosto, inoculated with yeast, and fermented for six days at the mountaintop — an elevation of 2,223 m. It is then finished drying in a dark room under carefully controlled conditions.
In the cup, we taste orange blossom, rose hip, and sumo citrus — a vibrant mix of florals and bright citrus that feels like a spring day.
