Hacienda Copey was established in 2011 to produce the highest quality specialty coffee in the Copey district of the Los Santos Zone in San Jose, Costa Rica. The farm is located at a high altitude, 1,840 to 2,195 meters above sea level. Copey has received multiple awards from the Costa Rica COE (Cup of Excellence) since 2017, placing first twice.
Cherries were received and classified, leaving only the ripest. After the cherries were pulped, 100% of the mucilage was left on the beans. The beans were then placed on African beds to dry for about seven days.
