This coffee is from El Vergel Estate and produced by Shady and Elias Bayter. They have been involved in farming since their childhood, following in their parents’ footsteps, who first started with growing avocados. In 2012, the Bayter brothers ventured into the world of coffee and fell in love with it.
This Java is Carbonic Maceration Natural processed. It consists of 96 hours where CO₂ is induced at the beginning, up to 6 bars, to generate high pressure, break down the cascara, or macerate, so the fermentation process proceeds easily for the microorganisms and creates an anaerobic state. Afterwards, it is sun-dried on raised beds for 25 days and stabilized for 45 days in GrainPro bags before milling.
