The Pillcocaja family has taken meticulous care of the coffee plants and continuously strives for improvement and excellence. Pillcocaja handles a small production of coffee which allows it to maintain a high quality.

The cherries are handpicked from the mountains at an elevation of 1700 meters under special irrigation control. They are then taken to the farm’s wet mill, located 300 meters from the crops, where they are washed, floated, and manually selected. Next, they undergo a natural dehydra- tion process before undergoing anaerobic fermentation for 120 hours in stainless steel tanks. The beans are then dried for approximately 28 days on one-level African beds in a drying room where temperature and air flow are carefully controlled.
