El Placer is owned and run by Sebastian Ramirez, a fourth generation coffee producer. It is located at the heart of El Eje Cafetero. What makes El Placer different is that Sebastian takes processing a step further by adding the juice from coffee cherries during fermentation to maximize the flavor profile.
El Placer makes sure to use 100% ripened coffee cherries, 25 degrees Brix. When processing, the coffee cherries undergo 280 hours of fermentation with coffee cherry juice and CO2 injected. The temperature is controlled at 18℃. After that, the coffee is dried slowly for 20 days in total.
