El Burro Estate is one of the three farms owned by the Lamastus family. Lamastus family has been producing coffee for four generations in Boquete since 1918. They are the record breaker with 95.25 points in the Best of Panama Competition 2019.
The “A” stands for the anaerobic inoculation or fermentation. The whole coffee cherries first undergo 6-day anaerobic fermentation in the tank. After that, the coffee cherries will be taken to drying beds for a slow drying (SD) of more than 30 days. The concentrated liquid or fruit juice being produced during the anaerobic fermentation containing natural yeasts, microorganisms and bacterias will later be used for other processes.

Water temperature: 92°C
0”: bloom to 60g
45”: pour to 120g
1’30”: pour to 180g
2’15”: pour to 240g
2’50” – 3’00”: finish
